Raspberry Cupcakes ( Makes 18 Cupcakes) Sorry no picture!

Anything to do with Raspberries i love no matter what! I wanted to find a recipe for Raspberry Cupcakes. And of course found a great recipe. This is another all time favourite cupcake! i have so many favourite cupcakes but this is one of them! So off i go baking another recipe!

Raspberry Cupcakes:

  • 1 cup (2 sticks) butter, softened
  • 1 1/4 cups granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 2 3/4 cups sifted cake flour
  • 1/4 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 pkg (10 ounces) frozen raspberries in syrup thawed
  1. Preheat oven to 350°F. Spray pan with vegetable pan spray or line with baking cups. In medium bowl, beat butter and sugar with electric mixer until light and fluffy.
  2. Add eggs, one at a time, and vanilla; mix well. Combine flour and baking powder. Alternately add flour mixture and milk, mixing well after each addition.
  3. Fold in raspberries. Spoon batter into prepared pan. Bake 20-25 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan on rack; remove and cool completely before decorating.

Raspberry Cupcake Butter Cream Icing:

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter or margarine , softened
  • 1 tsp vanilla extract
  • 4 cups sifted confectioners’ sugar (about 1 lbs.)
  • 1/3 cup seedless raspberry preserves
  1. In large bowl, beat shortening and butter with electric mixer until light and fluffy. Add vanilla; mix well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add raspberry preserves and beat at medium speed until light and fluffy
